I’m ending my Utah trip posts with my Lindsay Lohan impression at the Cirque Lodge. It’s just a few blocks from Melissa’s house. HA HA HA!
Melissa insisted on taking us to the Mountain something or other for caramel apples dipped in white chocolate then sprinkled with apple cinnamon. They were yummy! I’ve never been a caramel apple fan but I was converted.
Our conversation turned to the fact that Melissa has a friend (or two) who are stingy and won’t share their secret recipe for caramel apples, where the caramel actually stays on the apple. I assured her that if I knew anyone that had such a recipe, I’d find it for her.
So here’s my plea! If you have the coveted caramel apple recipe please share with me and put poor Melissa out of her misery. Apparently she’s been attempting the impossible with several failed attempts.
If needed, I’m fully willing to barter for the reciepe with a secret one of my own. {wink}
I’ve tried to get OUR secret family recipe for years but I’m not trust worthy enough and here you go willing to throw away years of secrecy for a DAMN carmel apple recipe. Grandma is going to be sooooo pissed!! At least I’ll finally not be the shmuck in the family.

Those would be Rocky Mountain Chocolate Factory apples. I’d know them anywhere. Whenever we’re out west, I have to stop and get some.
My DH and I were at a company retreat in Whistler, BC a few years ago. We had just finished up a huge company dinner – loads of desserts, seven course meal – the whole thing. We were stuffed. But were planning on sleeping in the next morning and having some caramel apples from RMCF for breakfast the next morning (awesome, no?.) We had just gotten our GIGANTIC apples and were riding the elevator up to our room, when it stops and who happens to get on the elevator with us? Half of the people at his firm, including several partners, who we had just eaten this HUGE meal with. We looked like the biggest pigs. I was so embarrassed.
And honestly? It was totally worth it. I’d do it again, shame and all.

love your impersonation! it’s great. and those white chocolate cinnamon sugar carmel apples are the BEST!!! personally i don’t have such a recipe, but i’ve got a friend… i’ll see if i can do some convincing. which brings me to secret recipes… i totally hate them! don’t see the point in them at all. we have a friend who make cinnamon taffy, but won’t give up the goods?! and finally, i just want to apologize for not commenting as much as usual. life is crazy (isn’t it for everyone) so i haven’t had tons of time to comment. but know i’m out here, lurking!
I think I saw on the Food Network one time that they dipped the apple in powdered sugar first before putting the caramel on, and it stayed on the apple.
They also suggested using MacIntosh apples. Store bought apples are usually coated in wax and so it is hard to keep them coated with the caramel.

My husband and I have a frequent apple card from our Rocky Mountain Chocolate Factory. They are the best ever! My relief society is making carmeled apples at super saturday. I will try and nab the recipe and send it to you.

I think the temperature of the carmel is more important than a special recipe. If it’s too hot, it slide off; too cool, and it won’t coat. A friend recommended a crock pot for keeping it the right temp. (I have a baby one that works slick!) It’s so much easier than trying to keep a steady temperature on the stove.

Did you ever find a good recipe that didn’t slide off the apple?
Did you remove the wax coating from the apple before applying the caramel. If not, stick the apple in boiling water for 1 second. Remove and wipe off the wax. Or, you can use a vegetable based soap and remove the wax with that, hot tap water and a soft brush.
I prefer the “soap” method as the boiling water will leave some brown spots on the apple. It doesn’t change the taste, though.
Sand the apples first. Gently, but effectively.

I love Rocky Mountain Chocolate Factory's apples! I never liked caramel apples because I hated getting the hard caramel stuck on my teeth! These apples have soft caramel mixed with some amazing white chocolate! Every time I have one, I feel in heaven! I'm addicted!
